Any ardent cricket lover would love to watch cricket and enjoy eating delicious Dhamaka Hyderabadi chicken Dum Biryani, so how good would it be if it were to be made fresh and pure at home and shared with friends? Yes people, you can make Biryani on your own, enjoy cricket, invite friends and make your better half happy.
It is very easy to make Biryani, just follow my instructions and you will be a pro in making in this Biryani. I am an ardent fan myself of cricket and Biryani, so learn something very enjoyable and delicious that you can make with fresh and pure ingredients.
Lets make Hyderabadi Chicken Dum Biryani
You will need the following ingredients.
1. Chicken (I prefer chicken legs)
2. Oil – 110 ml (Canola oil)
3. Onions – 3 onions cut into small sqaures
4. Ginger garlic paste (2 tsp)
5. Turmeric powder(1/2 tsp)
6. Red chilli powder (1 tsp)
7. Coriander powder (2 tsp)
8. Cloves, Elacis, Cinnamon
9. Tomatoes – 3 count
10. Yogurt
11. Coriander leaves
12. Biryani Masala (1 Tsp, Bombay Biryani masala)
13. Basmati Rice
14. Salt
Step 1: Marinate 8 pieces of Chicken legs with 1/2 packet tandoori masala, 3 tsp yogurt, 1 tsp ginger garlic paste for 1 or 2 days (Do not add Salt, Salt already present in tandoori masala)
Step 2 : Prepare Biryani paste for layering (watch video)
Add 110 ml oil, 5 Cloves, 5 Elacis, 5 Cinnamon, Add 3 onions cut into small square pieces and fry until brown. Add 3 square cut tomatoes, 2 tsp ginger garlic paste, Turmeric powder (1/2 tsp), Red chilli powder (1 tsp), Salt (1 tsp – according to your taste depending on your location) Coriander powder (2 tsp), Biryani Masala (1 tsp), Yogurt (6 tsp) and 10-15 branches of fresh Coriander leaves. Cook for 3-4 mins
Step 3: Prepare Rice
Add 3 full measures as shown in video (1500 ml or 3 pints or 6 cups)of Basmati rice in a vessel with 3/4 full water, Add 4 tsp Salt. Boil water in vessel, add rice to boiling water and salt, cook rice partially for 3-4 mins until you see broth, drain water from vessel and use rice in step 4
Step 4: Prepare Biryani tray and layer
Arrange marinated chicken legs in the tray, add yellow color in a cup of 2% milk, layer rice on top of marinated chicken, mix left over tandoori masala with rice and add that to tray, add yellow color milk to layer of rice. (watch video for method)
Step 5: Seal Tray, Preheat Oven and Bake
Seal tray airtight with aluminium foil and place Biryani tray in oven for 50-60 mins
